I am a big fan of home raising rabbits.  Rabbit meat is both low in fat and high in protein. I find that it relatively inexpensive and lower in maintenance that other animals you can raise for home meat production.  I have several articles about this as well as some reviews of my favorite books on rabbit raising.

The manual below is a start to finish document that covers every aspect of raising rabbits for home meat production.  It includes selection, feeding and food preperation, as well as treating disease.  There are also sections for construction of rabbit hutches.

One thing I like about this document is that it is written for austere conditions by volunteers with experience in those conditions.  A large part of what I do is adopt techniques from mainstream and try to make them work with scrap and little input.  I figure that is some missionary can make something work using items from a third world scrap pile then something in America can make it work during a disaster.
